These cake-like cookies are delightfully soft and chewy, with a slight tang from the Greek yogurt.

Makes: 20 cookies

Serving Size: 1 cookie, 32g

Greek Yogurt Cookies

Ingredients:

  • 1 cup (227g) “Fage” 2% lowfat Greek yogurt
  • ½ cup (122g) unsweetened applesauce 
  • 1 large (50g) egg
  • 1 tablespoon (21g) honey
  • ½ teaspoon vanilla extract
  • 1 cup (125g) flour 
  • ½ cup (45g) rolled oats 
  • 1 teaspoon baking powder 
  • pinch salt
  • ½ cup (84g) “Nestle Toll House” semi-sweet chocolate chips

Instructions:

  1. Preheat the oven to 350 degrees F and prepare a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the wet ingredients: yogurt, applesauce, egg, honey, and vanilla extract. In a separate bowl, combine dry ingredients of flour, oats, baking powder, and a pinch of salt.. Add the dry to the wet mixture and stir until just combined.
  3. Fold in the chocolate chips.
  4. Scoop roughly 1-2 tablespoons of dough and space 2-3 inches apart on a prepared baking sheet.
  5. Bake for 10-12 minutes. Let cool and set for 5 minutes before eating.

Notes:

  1. You can make a 1:1 substitute of all purpose flour for almond flour or oat flour.
