This healthy salad combo is the perfect mix of salty sweet: the sprouts are complimented with crispy sweet apples and a tangy dressing made from apple cider vinegar and fig jam.

Honeycrisp Brussels Sprouts Salad

Ingredients:

  • 1 lb (448g) shaved Brussels sprouts
  • 8-ounces (224g) diced ham
  • ¼ cup (28g) grated Parmesan cheese
  • 2 medium (364g) Honeycrisp apple (chopped)
  • ¼ cup (56g) apple cider vinegar 
  • 1 medium (42g) shallot (minced)
  • 2 tablespoons olive oil
  • 2 tablespoon Dijon mustard
  • 1 tablespoon (20g) fig jam
  • 1 teaspoon orange zest 
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions:

  1. In a large bowl, combine Brussels sprouts, ham, Parmesan, and apple. 
  2. To make the dressing, combine the remaining ingredients and whisk well. Pour over the salad and toss to coat evenly.

Notes:

  1. This salad can be served warm or chilled! For a warm version, saute the diced shallots in a skillet over medium high. Then add the remaining dressing ingredients. Add the Brussels sprouts to the skillet and cook for an additional 3-5 minutes until slightly tender. Transfer back to a mixing bowl and toss in remaining salad ingredients.
