These no bake cinnamon rolls are the ultimate healthy swap for everyone’s favorite breakfast pastry.

Makes: 13 rolls

Ingredients:

  • Base:
  • 1 2/3 cup ground almond flour (186g)
  • 1 scoop (31g) “Optimum Nutrition Gold Standard 100% Whey”,  vanilla ice cream
  • 2 scoops  “Vital Proteins” unflavored collagen peptides (20g)
  • 1/3 cup almond butter (86g)
  • 1/4 cup maple syrup (80g)
  • 1 teaspoon cinnamon 
  • 1/2 teaspoon salt 
  • 1 teaspoon vanilla extract
  • Filling:
  • 1 cup pitted dates (200g)
  • 1 tablespoon cinnamon 
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon water

Instructions:

  1. In a large food processor, combine the almond flour, protein powder, collagen, almond butter, maple syrup, 1 teaspoon cinnamon, salt, and 1 teaspoon vanilla extract. Pulse until you have a thick dough ball.
  2. Wrap the dough up in some plastic wrap or parchment paper and place in the fridge for 30 to 45 minutes. This is super important! The dough is easier to work with if it is cold.
  3. Make your filling: In the same food processor, combine the dates, 3 teaspoons cinnamon, nutmeg, ½ teaspoon vanilla extract, and water. If your dates are cold and hard, make sure you soak them in some warm water for 10 minutes prior to mixing with the rest of the ingredients so that they blend nicely.
  4. Take the dough out of the fridge. Roll it out into a Large rectangle on a silicone mat about 1/4 inch thickness.
  5. Spread the date filling on top of the dough. Try to get it as close to the edge as possible. Dates are sticky so it takes a little bit to spread this mixture, but it comes together after about 5 minutes I promise! I spread it with a small rubber spatula to help with the sticking.
  6. Roll the rectangle up long ways, using the silicone mat to help guide you. Slice into 13 cinnamon rolls and enjoy!

Notes:

  1. Substitute any variety of whey or collagen protein powders but know that macros and flavor may vary.
