These healthy sloppy joe sweet potatoes are packed with so much flavor and nutrients and perfect for an easy weeknight dinner.

Makes: 8 servings

Serving Size: 1 potato with sloppy joe topping (307g)

Sloppy Joe Sweet Potato

Ingredients:

  • 8 medium sweet potatoes (1360g) 
  • 1/2 tablespoon olive oil 
  • 2 lbs. 93% ground turkey (907g) 
  • 1/2 yellow onion (minced) (92g) 
  • 1 medium green bell pepper (diced) (110g) 
  • 3 cloves garlic (minced)
  • 1 teaspoon salt 
  • 3/4 teaspoon pepper
  • 1 teaspoon garlic powder 
  • 1 1/2 teaspoons chili powder
  • 1 ½ cups canned tomato sauce (372g)
  • 1/2 cup ketchup (136g)
  • 2 tablespoon apple cider vinegar (28g)
  • 2 teaspoons Frank’s Red Hot sauce

Instructions:

  1. Preheat the oven to 450 degrees F.
  2. Poke holes in the sweet potatoes with a fork and bake in the oven for 45-60 minutes until the skin starts to brown and come away from the center of the potato. Set aside.
  3. Meanwhile, heat up the olive oil in a large deep pan or wok over medium-high heat.
  4. Add the ground turkey and brown (about 3-4 minutes). Next, add the onion, bell pepper, and garlic. Cook until meat is cooked through, about 4-5 additional minutes. 
  5. Add in the salt, pepper, garlic powder, and chili powder, tomato sauce, ketchup, apple cider vinegar, and hot sauce. Bring to a boil and then simmer for 10 minutes.
  6. Cut baked potatoes in half and portion sloppy Joe mixture on top and enjoy!
