Golden brown toast, a soft, custard filling, and a mountain of brightly colored berries? It almost sounds too pretty to eat! But trust us – you won’t want to pass on this breakfast.

Ingredients:

  • 2 slices (80g) ‘Dave’s Killer’ white bread
  • 1 large (50g) egg
  • 3 tablespoons (53g) nonfat Greek vanilla yogurt
  • 1 cup (142g) mixed berries

Instructions:

  1. Preheat the air fryer or oven to 350 degrees F. If using the oven, line a baking sheet with parchment paper.
  2. Using your fingers or the back of a spoon, press in the center of each bread slice to create an indentation.
  3. To make the custard, whisk together the egg and yogurt in a small bowl. Spoon into the bread indentations, dividing the mixture evenly between the two slices. Top with fresh berries and bake in the air fryer for 4-5 minutes (or alternatively 8-12 minutes in the oven) until the bread is golden brown and the edges of the custard are starting to caramelize. 
  4. Dust with a little powdered sugar and enjoy with additional yogurt and fresh fruit, if desired (macros not included).

Notes:

  1. Custard toast is best eaten fresh from the oven.
  2. You can mix and match any flavor of Greek yogurt with the fruit of your choice. For a more indulgent treat, try topping your custard toast with chocolate chips or sliced bananas with cinnamon sugar. Macros will vary.
